The Protected Designation of Origin (PDO) is a European sign of identification, created in 1992. It protects the name of an PDO cheese of which the production, transformation and elaboration must have taken place in a determined geographical area with an accepted and certified savoir-faire method.
In Italy, AOC corresponds to DOC for Denominazione di Origine Controllata. In Germany, there is the "QbA" for wines (Qualitätswein bestimmter Anbaugebiete), and in Spain "D.O." for Denominación de origen. Switzerland uses the same terminology as France.
More than 180 European cheeses, butters and creams benefit from the AOP, of which 49 are French. These products come from a specific geographical area and are made according to a specific, ancestral, savoir-faire method.
