Yarg is an English cheese, made in Cornwall. It is produced in Linher dairies, near Turo. Yarg is the anagram of "gray" which is the name of those who developed the recipe of this cheese. The texture of Yarg varies, depending on how long the maturation is. The cheese is creamy, mild and slightly tangy, but in time, it gets crumbly. The taste is close to Caerphilly. The specificity of this cheese is to be wrapped in nettle fresh leaves before the maturation. These leaves give a particular taste to the cheese, like a mushroom taste. There is also another version of this cheese made of garlic cheeses. Yarg is very appreciated by the cheese amateurs and had also won several awards.
