Cottenham is blue-veined cow's milk cheese, produced in Cambridgeshire . It can be compared to Stilton. However, its slightly flat shape does not enable it to be preserved for long enough so that it resembles Stilton. The duration of the maturing process depends on the thickness  of the cheese and the ambient temperature.
