Cairnsmore Ewes, a Scottish ewe's milk cheese, aquires its full flavour after being matured for 6 months.  

With hints of old-style caramel toffe, it is moist on the mouth and has hints of boot polish, developing into a salty sweetness. It is very satsfying.
