Ragstone is an English goat's milk cheese, produced by Charlie Westhead in Dorstone, Herefordshire. It is log-shaped, both ends are wider than the trunk. It weighs 200 g and has an ivory white colour. Young, Ragstone is firm and creamy and gets softer and a bit lemony with time. At the end of the fabrication, the cheeses are rolled in charcoal. After that, mould spreads in the cheeses.
