Ardrahan: Introduction
Ardrahan is an Irish cheese made from cow’s milk, produced by the Burns family since 1983 in Kanturk, Cork. Round, with a weight of 1kg, it has a honey yellow colour and a silky texture. Semi-mild, the taste evokes the aromas of butter and is pronounced and rich in aromas. With age, the cheese acquires more intense aromas and a nutty flavour.

Fabrication of Ardrahan
The exact recipe remains secret. The milk is heated to 31°C at which point a macrobiotic culture is added. Next the brine is poured to form the curds. The curds are then cut, drained and then placed in moulds. The cheeses are then bathed in a salted solution before being matured for around 8 weeks.
