Introduction to Devon Blue

Devon Blue is an English blue-veined cheese, produced by Robin Congdon in his farm of Ayreshire, located in Devon county. Each cheese weighs 3 kg. The crumbly yellow texture is full of blue veins. The taste is particularly rich, creamy and mild.

Fabrication of Devon Blue

Devon Blue is made with raw cow's milk. The milk is heated, then the vegetarian rennet and the penicillium roqueforti which gives the blue colour are added. Contrary to the other blue-veined cheeses, Devon Blue, while moulded in cylinders, is not drained. Then, the cheeses are several times turned. After three or four weeks, once blue is developed, Robin Congdon wraps the cheeses in gold paper. From six to eight weeks are necessary for the aging.
