Colwick a cow's milk cheese, produced first in Nottinghamshire. In the 18th century, it was regarded as one the best British cheeses. Colwick cheese is particular  in that it is placed in straw, in a wooden oblong box . This cheese is considered to be ready for consumption after two days.
