Canadian Camembert is a perfect imitation of the archetypal French Camembert. Mostly, it is made industrially by French people in Quebec. It is identical in shape and weight, and in its bloomy rind. In Canada, it is classed as a soft cheese, without distinguishing the nature of the rind, but with the mention ?surface matured?. The brand which has acquired the most notoriety and is the most popular is ?Madame Clément,? which has been produced for more than half a century by a Belgian from Beloeil, Roger Clément.
