Manchester is one of the most interesting American cheeses. Made using raw milk, in the west of Vermont, Manchester cheese develops aromas of the farm and the mountains, flavours that linger in the mouth. Its rind is washed regularly and the cheese is matured in a humid cellar for 2 to 4 months.
