Westfield Farm’s Blue Log is a log of goat’s cheese produced in Massachusetts, when being matured, Penicillium Roqueforti is introduced onto the surface of the cheese, this gives a light seasoning to the cheese, but because it is not absorbed into the pate, the mould does not take over the flavour of the cheese. Westfield Farm’s Blue Logs is similar in texture, flavour and characteristics to Saint-Maure de Touraine, from France.
