Introduction to Keen's cheddar

Keen's Cheddar is a raw milk Cheddar made at Moorhaves, Wincanton in Somerset. The first Keen's Cheddar was produced in 1889; the Keen family continues to own and operate the dairy to this day. The cheese has won several awards – for instance, it has twice won the “Best Cheddar” prize during the World Cheese Awards held in London.The Cheddar is round; can weigh 27, 14 or 1.5 kg; has a hard texture; and a nutty, slightly spicy taste.


Fabrication of Keen's Cheddar

Keen's Cheddar is produced from raw cow’s milk. All the milk used comes exclusively from the farm’s cows, where the animals are fed with great care to ensure that specific Keen’ taste in the final product. Rennet is used to create the coagulation. The curd thus obtained is stirred, cut, salted and then pressed. The cheese is wrapped following the traditional method of cloth wrapping in order to shape it and to develop the rind. Keen's Cheddar takes between 12 and 18 months to mature.
