Pineapple is a cow’s milk cheese, it is a pressed, medium-hard cheese, and is moulded into the shape of a pineapple. It weighs on average 2.7kg. When it has been is pressed, it is plunged for a few minutes into water at 50°C, then is suspended in a net to and left to dry. Then it is matured for several months when it is rubbed with oil. Some are waxed. This cheese was created around 1845 in Lichtfield, Connecticut.
